Falafel Pita Sliders
Using Muy Fresco® Mediterranean-style Hummus
Ingredients
Yield: 3 falafel pita sliders
For Falafel
1 ¼ cups
Canned Chickpeas
1 cup
Red onion, chopped
Minced garlic
2 cloves
1/2 cup
Fresh parsley
1 tsp
Salt
1 tsp
Cumin
2 tsp
Olive oil
1/2 cup
Flour
For Israeli Salad
3
Roma tomatoes
1
Cucumber
1 cup
Red onion
1/8 cup
Lemon juice
3 tbsp
Olive oil
Salt
For sliders
2 tbsp
Muy Fresco® Mediterranean-style Hummus
1/2 cup
Pickled turnips
3 pitettes
Mini pita breads
Directions
For falafel: Place chickpeas, onions, garlic, parsley, tomatoes, cumin, salt and flour into food processor and pulse until combined.
Form into ½-inch-thick, 2-inch-round patties.
Heat oil over medium-high heat and pan fry patties.
Remove from pan and drain on paper towels.
For Israeli Salad: Seed tomatoes.
Chop tomatoes, cucumbers, onions and parsley.
Mix with lemon juice, olive oil and salt.
To assemble: Layer hummus, falafel patty, pickled turnip and Israeli salad on pitettes.
Garnish with toothpicks and olives.
Serve with side of tabouli salad.
